Yummy leftovers

Last night we had ravioli with roasted root vegetables.  It was a beautiful, delicious meal.  Today's lunch, though, was even better.  I combined leftovers-- potato-parsnip gratin, braised kale, and roasted root vegetables-- with a quick bechamel sauce... stirred together a whipping cream biscuit crust with chives...  topped the vegetables with the lovely rustic crust and baked at 400 degrees until bubbly around edges and golden brown.  Best of all, my whole family ate it-- toddler included!

Getting our CSA basket this afternoon... Can't wait to be inspired by what's in it!

try, try again

Once upon a time, not so very long ago, I had a food blog.  Then I was diagnosed with gestational diabetes, & food became less a fun, creative project and more a never-ending math problem.  I was so busy counting carbs that I lost inspiration-- and forgot my username and password.  So, let's try this again...

A lot has happened in the meantime.  Sadie Rose was born.  My husband quit his job & found a new one.  We moved-- in with the in-laws.  We sold our house & bought a new one-- moved again.  And now we're in the process of getting settled in a new home, new place.  Bella's potty training.  Sadie Rose is learning to walk.  And I'm trying to get back into the habit of cooking.  Hopefully, keeping a blog will help.

One of the things I miss most about living in Jonesboro is our CSA through Whitton Farms.  Keith & Jill spoiled us.  Here in Little Rock, we subscribe to B.A.M. (Basket-A-Month), and will be getting our basket this week!  Until then, here's what we'll be eating:  potato-parsnip gratin (from Moosewood Restaurant New Classics) and sauteed kale; banana nut muffins; stewed lentils with tomatoes (from Ina Garten's Barefoot Contessa at Home) over basmati rice; and ravioli with roasted root vegetables.  If there are roasted vegetables leftover, they'll be going into a lovely soup. 

When we sit down to eat, Bella likes to tell me, "Mommy, you make yummy food."  (This is not the same as actually eating the yummy food, but it's still nice.)  Let's hope that this week's menu makes her proud.
